Ancient legends linked parsley with death, for ancient Greeks crowned victors of funeral games with wreaths of this herb, and the poisonous, well-named Fool's Parsley (Aethusa cynapium), resembles the culinary type. The ornamental dark green leaves have a fresh, concentrated flavor, three times more vitamin C than oranges, and twice as much iron as spinach. Parsley attracts beneficial insects to your garden and hosts caterpillars of black swallowtail butterflies. .

PLACEMENT & CULTIVATION
Italian flat-fleaf parsley grows lush and full in fertile moist soils, the nutritious and bright-tasting leaves essential for many dishes, especially soups. Mulch with hay or straw to conserve moisture when growing in the vegetable garden and harvest frequently for a productive season-long harvest. Easy to dry at the lowest possible oven settings, generally 150-170F. Low temperatures will ensure it retains the fresh green color and flavor.
